The pectin, which is found mostly in the peel and the white pith (the layer just under the peel), is what gives the concentrate its lovely thickness, the pectin acts as a natural gelling agent. Take a Tablespoon full of citron tea and put it in an empty mug (teaspoon for a smaller cup). Then break it up a bit with your spoon, (it is thick like jam) add hot water and stir to dissolve, adjust to taste!
