One-Pan Ginger Lemon Honey Pork Roasted Veggies

One-Pan Ginger Lemon Honey Pork & Roasted Veggies

This easy, one-pan meal is packed with bright, cozy flavors thanks to Kettle and Hive Ginger Lemon Honey Concentrate. The natural sweetness of honey, the warmth of ginger, and the zing of lemon make the perfect glaze for tender pork chops, paired with roasted veggies for a balanced, no-fuss dinner.

Ingredients:

  • 2 tbsp Kettle and Hive Ginger Lemon Honey Concentrate
  • 4 boneless pork chops (about 1-inch thick)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half-moons
  • 1 cup baby potatoes, halved
  • 1/2 cup chicken or vegetable broth

Instructions:

  1. Preheat & Mix the Glaze:
Preheat your oven to 400°F (200°C). In a small bowl, whisk together Kettle and Hive Ginger Lemon Honey Concentrate, soy sauce, Dijon mustard, and garlic.

  2. Sear the Pork:
Heat olive oil in a large oven-safe skillet or cast-iron pan over medium-high heat. Season pork chops with salt, pepper, and red pepper flakes. Sear for about 2 minutes per side until golden brown. Remove from the pan and set aside.

  3. Prepare the Vegetables:
In the same pan, add baby potatoes, bell pepper, and zucchini. Pour in the broth and toss the veggies to coat.

  4. Bake Everything Together:
Nestle the seared pork chops back into the pan and brush them with the Ginger Lemon Honey glaze. Transfer the pan to the oven and bake for 15-18 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the veggies are tender.

  5. Serve & Enjoy:
Let the pork rest for a couple of minutes, then spoon some of the pan juices over the top before serving. Pair with rice, quinoa, or a slice of crusty bread to soak up the sauce.

This dish is full of flavor and requires minimal effort—perfect for a cozy weeknight meal. The pork stays juicy, the glaze caramelizes beautifully, and the veggies roast to perfection. Hope you love it!
